02 - 2 tbsp coconut sugar or light brown sugar
03 - 2 tsp baking powder
04 - ½ tsp baking soda
05 - ½ tsp sea salt
06 - 1 ½ tsp ground turmeric
07 - ½ tsp ground ginger
08 - ½ tsp ground cinnamon
09 - ¼ tsp ground black pepper
10 - ¼ tsp ground cardamom

→ Wet Ingredients

11 - 1 ¼ cups unsweetened almond milk
12 - 2 large eggs
13 - ¼ cup melted coconut oil, plus extra for greasing
14 - 1 tsp vanilla extract
15 - Zest of 1 small orange

→ Optional Toppings

16 - Greek yogurt or coconut yogurt
17 - Fresh berries
18 - Sliced banana
19 - Honey or maple syrup for drizzling
20 - Chopped nuts or seeds

# Steps:

01 - Preheat your waffle iron according to manufacturer's instructions and lightly grease the plates with coconut oil.
02 - In a large mixing bowl, whisk together whole wheat flour, coconut sugar, baking powder, baking soda, sea salt, ground turmeric, ginger, cinnamon, black pepper, and cardamom until evenly blended.
03 - In a separate bowl, whisk together almond milk, eggs, melted coconut oil, vanilla extract, and orange zest until fully incorporated.
04 - Pour the wet mixture into the dry ingredients. Stir gently until just combined—do not overmix. The batter should be thick but pourable; add a splash more milk if necessary.
05 - Ladle approximately ½ to ¾ cup of batter into the preheated waffle iron. Cook for 4–5 minutes, or according to your iron's instructions, until golden brown and crisp.
06 - Remove cooked waffles and keep warm while repeating with remaining batter.
07 - Serve immediately, topped with yogurt, fresh fruit, honey or maple syrup, and nuts or seeds as desired.

# Expert Advice:

01 -
  • The black pepper tricks your body into absorbing more turmeric's anti-inflammatory compounds
  • They freeze beautifully so you can batch cook breakfast for busy weeks
02 -
  • Overmixing makes tough waffles so stop as soon as flour disappears
  • The batter thickens as it sits so add another splash of milk if needed
03 -
  • Let the batter rest 10 minutes for fluffier waffles
  • Don't open the iron early or you'll lose that crisp exterior
