# Steps:
01 - Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat until shimmering.
02 - Add ground turkey to the hot skillet. Cook while breaking it up with a spatula until browned and cooked through, approximately 5-6 minutes.
03 - Stir in minced garlic, ginger, and half of the green onions. Sauté for 1 minute until fragrant.
04 - Add coleslaw mix to the skillet. Stir-fry for 3-4 minutes until vegetables are tender yet maintain their crispness.
05 - Pour soy sauce (or coconut aminos) and rice vinegar into the skillet. Drizzle with remaining sesame oil. Toss all ingredients to combine and heat through for 1-2 minutes.
06 - Remove from heat. Taste and adjust seasoning as needed. Garnish with toasted sesame seeds and additional green onions if desired. Serve immediately.
