Thai Mango Sticky Rice (Printable Version)

Sweet ripe mango meets creamy coconut sticky rice for a delicate blend of flavors and textures.

# Ingredient List:

→ Sticky Rice

01 - 1 cup glutinous (sweet) rice
02 - Water, for soaking and cooking

→ Coconut Sauce

03 - 1 cup full-fat coconut milk
04 - 1/4 cup granulated sugar
05 - 1/4 teaspoon salt

→ Mango

06 - 2 large ripe mangoes, peeled and sliced

→ Garnish

07 - 2 tablespoons coconut cream (optional)
08 - 1 tablespoon toasted sesame seeds or mung beans (optional)

# Steps:

01 - Rinse glutinous rice under cold water until clear. Soak in water for at least 4 hours or overnight.
02 - Drain soaked rice and steam it in a cheesecloth-lined basket for 25 to 30 minutes until tender.
03 - In a small saucepan, combine coconut milk, sugar, and salt. Heat gently over medium heat, stirring until sugar dissolves. Avoid boiling.
04 - Transfer steamed rice to a bowl. Pour in three-quarters of the coconut sauce, stirring gently to coat rice evenly. Cover and let absorb for 10 to 15 minutes.
05 - Peel and slice the mangoes.
06 - Plate sticky rice, arrange mango slices alongside, drizzle with remaining coconut sauce, and optionally garnish with coconut cream and toasted sesame seeds or mung beans.

# Expert Advice:

01 -
  • It tastes like an expensive dessert but costs almost nothing and requires zero baking skills.
  • The contrast of creamy rice against bright, juicy mango never gets old—it's the kind of dish that feels like a small celebration every time.
  • You can make the rice ahead, which means you're never stressed when guests arrive.
02 -
  • Use full-fat coconut milk without fail; the light version will never give you that luxurious, velvety texture that makes this dish special.
  • Serve the rice warm and the mango at room temperature; if you refrigerate everything together, the rice hardens and loses its magic.
03 -
  • Make the coconut sauce thicker by reducing it gently on the stove for a few minutes; it becomes glossier and clings to the rice like silk.
  • If your rice seems dry after sitting, warm it gently with a splash of extra coconut milk stirred in, and it comes back to life immediately.
