- 6 clementines: peeled and segmented
- 2 tablespoons fresh mint leaves: finely chopped
- 1 teaspoon honey or agave syrup (optional): for extra sweetness

Instructions
- Step 1:
- Gently peel the clementines and separate them into segments removing any white pith if desired.
- Step 2:
- In a mixing bowl combine the clementine segments with the chopped mint leaves.
- Step 3:
- If desired drizzle with honey or agave syrup and lime juice.
- Step 4:
- Toss gently to combine.
- Step 5:
- Serve immediately or chill for 15 minutes for a cooler more refreshing salad.
