A refreshing, vibrant winter fruit salad featuring juicy clementine segments and fresh mint leaves—perfect as a light dessert or palate cleanser.

This is one of my favorite summer salads to enjoy when clementines are in season

Ingredients

  • 6 clementines: peeled and segmented
  • 2 tablespoons fresh mint leaves: finely chopped
  • 1 teaspoon honey or agave syrup (optional): for extra sweetness
  • 1 teaspoon fresh lime juice (optional):

Instructions

Step 1:
Gently peel the clementines and separate them into segments removing any white pith if desired.
Step 2:
In a mixing bowl combine the clementine segments with the chopped mint leaves.
Step 3:
If desired drizzle with honey or agave syrup and lime juice.
Step 4:
Toss gently to combine.
Step 5:
Serve immediately or chill for 15 minutes for a cooler more refreshing salad.
